Check out the fun from a previous taste of AAPI and Business Expo event at Jewel-Osco! It was a vibrant celebration of Asian American and Pacific Islander heritage, featuring a rich tapestry of cultural performances and activities. Attendees were treated to a spectacular lion dance performance, graceful Thai dancers, and captivating barefoot Hawaiian dancers. The event also showcased engaging cultural activities from the Chinese American Museum. To top it off, a variety of delicious food samples were available, allowing guests to savor the diverse flavors of AAPI cuisine.

Korean Pork Lettuce Wraps

Korean Pork Lettuce Wraps

Ingredients
  • 1 lb. pork tenderloin (cut into 1/2 inch slices)
  • 1/4 cup Kikkoman takumi sauce green onion garlic
  • 1/4 cup Kikkoman reduced sodium soy sauce
  • 3 scallions (chopped)
  • 2 cups cooked brown rice
  • 12 butter lettuce leaves
  • 1 cup English cucumber (thinly sliced)
  • 1 cup shredded carrots
  • 1/2 Tbsp. sesame seeds
  • 2 scallions (sliced)
  • Kikkoman sauce sriracha hot chili (for garnish, optional)
Directions
  • Place the pork slices in a large bowl. Add Takumi sauce and soy sauce, toss to coat. Cover with plastic wrap and marinate while you are preparing the white rice.
  • Preheat the air fryer to 400°F. Working in batches, arrange a single layer of pork in the air fryer, discarding excess marinade.
  • Cook for about 10 minutes, flipping halfway until browned and internal temperature reaches 145° F. To serve, divide brown rice among the 12 lettuce leaves. Top with pork, cucumber, carrots, sesame seeds, scallions, and Takumi sauce.

Spam Musubi in a Bowl

Ingredients
  • 1 cup cooked Riceland White Rice
  • 1tbs. Minced Garlic
  • 4 oz SPAM Less Sodium
  • 1 tbsp Canola Oil
  • 2 tbsp MIZKAN Broth Ramen Concentrate
  • 2 tbsp Chinese Cooking Wine
  • 1 tbsp Soy Sauce
  • 1/8 Sheet Dried Seaweed (optional)
Directions
  • Dice spam into small cubes, about 1/8 x 1/8 inch.
  • In a small skillet, add Chinese cooking wine, minced garlic, MIZKAN BROTH RAMEN CONCENTRATE, Soy Sauce and bring to a boil. Once boiling, reduce heat to medium-low and let it reduce for 1 minute while stirring occasionally.
  • Once a minute has passed, remove from heat and set aside.
  • Note - if you want the sauce slightly thicker, mix in cornstarch slurry or thickener of choice.
  • In a large skillet, add cooking oil on medium high heat. Once oil is up to temperature (about 2 minutes), transfer diced spam. Cook until the outside is nicely crusted, stirring frequently, about 2-3 minutes and set aside in a small bowl.
  • In a serving bowl, add rice and spam. Drizzle with sauce.
