Body Flex Bowl | Grilled Pork Tenderloin

Body Flex Bowl | Grilled Pork Tenderloin

Ingredients
  • 1 pork tenderloin
  • 1 teaspoon of seasoning salt, to taste
  • 1 teaspoon of black pepper
  • 1/2 teaspoon of adobo seasoning
  • 1 tsp. cinnamon ¼ tsp. nutmeg
  • 1 red onion, quartered with root intact for grilling
  • 1 green & red pepper, cut into chunks
  • 1 sweet potato, skin removed and sliced thick
  • 1 tablespoon of vegetable oil for grilling
  • 1/4 cup soy sauce
  • Juice of 1 lime ¼ cup avocado oil, plus more for the grill
Directions
  • Season pork tenderloin with seasoning salt, pepper and adobo seasoning.
  • Set grill to medium high heat at 375-400 degrees F. Place the Pork Tenderloin over direct heat for about 3-5 minutes on each side. Then move the Pork Tenderloin to indirect heat until internal temp reaches 145 degrees F. Allow a three-minute rest.
  • Grilled Veggies: Season all veggies with salt, pepper & a little EVOO.
  • Add all red onion & peppers to direct heat to get a good char on them for about 5 minutes depending on how hot your grill gets. Cook veggies over medium high heat for 2-3 minutes on each side.
  • Add sweet potatoes to grill and cook over medium high heat for 3-4 minutes on each side to get a good char then transfer to indirect (low) heat to continue cooking for 2 minutes.

Good Vibes Bowl

Good Vibes Bowl

Ingredients
  • 1lb pork tenderloin
  • 1-2 tablespoons cajun seasoning (Salt-free cajun seasoning is recommended to control the salt intake)
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 2 tablespoons EVOO
  • Green cabbage, shredded
  • 1-2 teaspoons adobo seasoning
  • 1 tablespoon EVOO
  • A splash of water
  • Kosher salt & black pepper, to taste
Directions
  • Combine cajun seasoning, EVOO, salt, and pepper together in a bowl. Slather on the marinade onto the pork tenderloin and let marinate for at least 24 hours.
  • Bring pork tenderloin to room temperature, at least one hour.
  • Pre-heat oven to 350 degrees Fahrenheit.
  • On medium-high heat, drizzle EVOO in an oven safe pan like a cast iron, sear pork tenderloin on all sides until browned, about 4-5 minutes each side. The goal is not to fully cook the pork at this stage, just get a good sear on it.
  • Place in oven and cook until 145 degrees internal, about 25 minutes.
  • Remove and let it rest for 10 minutes so juices can redistribute throughout.
  • In a separate non stick pan on medium heat, add EVOO to the pan, add cabbage, and season with kosher salt and black pepper.
  • Let cabbage sautee and whittle it down, about 3 minutes. Add adobo seasoning and toss together.
  • Season to taste with salt and pepper.
